Yemista (Greek for “stuffed” or “filled”) is a healthy, vibrant summer dish of garden fresh vegetables filled with a mixture of rice, herbs, and vegetables, and baked in a rich tomato and olive oil sauce.

Yemista Stuffed Tomatoes and Peppers

Ingredients:

  • 10 very ripe tomatoes

  • 10 green peppers

  • 2 onions, pureed

  • ½ head of garlic, pureed

  • 1 cup of chopped parsley

  • 1 cup of chopped basil

  • 1 cup of chopped mint

  • 1 ½ cups (400 grams) rice

  • 1 cup of olive oil

  • Salt and pepper

  • 4 tsp sugar
