Apple Lavender Pancakes

Picture this: fields of lavender, gently swaying in the breeze at the edge of the rolling green hills of Southern Australia, while sparrows chirp in the distance. Sounds dreamy, right?

 

It’s just one of the things travelers can experience on our Australia and New Zealand Uncovered Tour, when they stop at the Lyndoch Lavender Farm in the Barossa Valley. Lyndoch produces over 90 different varieties of this fragrant plant, whose scent we most often associate with soaps, perfumes, and lotions. But the bittersweet floral taste of lavender also makes a lovely addition to many foods—like in this stellar pancake recipe brought to us by Lyndoch Farm manager, Mat Arlanson. So throw an apron on, get cooking, and let the flavor of this delectable treat transport you to an aromatic land down under…

 

INGREDIENTS

½ cup self-rising flour

2 tbsp superfine sugar

½ tsp ground cinnamon

1 egg lightly whisked

1/3 cup milk

2 granny smith apples, peeled and grated

2 tsp L. angustifolia lavender seeds

Low fat frozen yogurt or cream, to serve

 

1)     Combine flour, sugar, cinnamon, and lavender seed in a bowl. Add the eggs and milk. Whisk until smooth, then stir in the apples.

2)     Heat a non-stick frying pan, lightly greased with butter. Pour ¼ cup of mixture into the pan. Gently spread out the batter with the back of a spoon to a 4-inch round.

3)     Cook the pancakes in batches for 2 minutes or until bubbles form on the surface, then flip and cook through the middle. (Keep the other pancakes warm in the oven while finishing the next batch.) Garnish with kiwi fruit or strawberry and frozen yogurt or cream.
